Billed as ‘modern authentic Japanese dining in the heart of Mayfair’, the swanky Sake No Hana is brought to you by the Hakkasan group. An inquisitive list is well calibrated to accompany spankingly fresh fare, ranging from whole Tristan lobster sashimi, to quail with shichimi pepper sauce, the signature spicy chargrilled Alaskan crab, and char-grilled wagyu beef with garlic ponzu. Look for ‘Oshouban Wines’ – ie, those ‘going along together’, such as Spanish Albariño ‘Marinero’ by Terras Gauda matched with raw fish and seafood. Other sections include ‘English Heritage’, where seven bins include Sea Pink from Dorset’s Furleigh Estate, and ‘Timeless Classics’, such as Barolo by Massolino, which jostles another division called ‘Contemporary Whites’ including Japanese Koshu. The ‘Cellar Selection’, meanwhile, features wines with more age, such as white Viña Gravonia from Lopez de Heredia, or fifth growth Pauillac, Château d’Armailhac, both with a decade or more under their capsules.
