Founder of Liberty Wines, David Gleave MW, adheres to the philosophy that 'the higher the cost price of the wine to us, the lower the margin we take' while compiling his list for the top-floor restaurant. This holds especially true when looking into the very endearingly 'auction priced' section which features, for example, a 2006 Château Latour at retail price.

Founder of Liberty Wines, David Gleave MW, adheres to the philosophy that ‘the higher the cost price of the wine to us, the lower the margin we take’ while compiling his list for the top-floor restaurant. This holds especially true when looking into the very endearingly ‘auction priced’ section which features, for example, a 2006 Château Latour at retail price. Aside from Bargainous Bordeaux, Australia offers several liquid assets particularly suited to the hearty, beefy cuts. Given the Australian roots of the previous celebrity chef owner of the restaurant, John Torode (of Masterchef fame), this is hardly unsurprising. If dining in the upper echelons of the tall, brick stack, be sure to try the steak tartare with ‘stout’ pickled onions and a smoked egg yolk, followed by veal sirloin with girolles, or a whole Dover sole with sea vegetables.
