Expect more than a brief encounter with the dignified, Europe-focused list, which places strong emphasis on Champagne, then rested, ready-to-drink, couthly-served Burgundy and Bordeaux. Dishes, served in the buzzing bar or first floor dining room, may include a deep green, and presumably very healthy wild nettle and spinach soup starter with oyster cream, followed by Herefordshire kid goat to share with white asparagus, then a caramelised apple with raisins and coconut-sheep’s yoghurt.
