Pie-making extraordinaire Calum Franklin, former executive chef at The Holborn Dining Room, has announced that he will be opening a restaurant in the French capital next year.

Franklin made his name as a purveyor of all things pastry-encased, with The Holborn Dining Room’s pies receiving critical acclaim for both their flavour and the beauty of the designs, with the architecture of his latticing and crimping gaining him a sizeable social media following of 142,000 on Instagram.
Now it has been revealed that Franklin will be bringing a taste of Britain to Paris as he prepares to open Public House on the Rue Daunou in the city’s Opera district.
Public House will be fusing elements of the Great British boozer with a classic Parisian brasserie, a cross-channel fusion he described as a “marriage”.
Franklin, who left The Holborn Dining Room in 2022, said of the forthcoming opening: “I’ve always dreamed of working in Paris, I’ve been here so many times over the years that the city has become like my second home. With Public House, I now have that home.”
Among the menu items already revealed are scotch eggs, sticky toffee pudding and, of course, pies.
